Aint no party like a Pakora Party!

There aint no party like an Evil Pakora Party! Pakora's are a brilliant tasty snack and starter for any get together or party. Very easy to make and dabble with the ingredients (once you know what your doing) and can be eatten with a range of different sauces mmmmmmmmmmmhhhh delicious....... (starts to drool)... someone get me a towel lol. Heres how you make them:

Ingredients
  •     1 cup chickpea flour (also known as Gramflour)
  •     1/2 teaspoon ground coriander
  •     1 teaspoon salt
  •     1/2 teaspoon ground turmeric
  •     1/2 teaspoon chili powder
  •     1/2 teaspoon garam masala
  •     2 cloves garlic, crushed
  •     3/4 cup water
  •     1 tbsp lemon juice
  •     1 quart oil for deep frying
  •     1 Potatoe (peeled and cut into small cubes)
  •     2 onions, sliced into rings
 Method

  1. Sift the gramflour into a bowl and mix in the coriander, salt, tumeric, chili powder, garam masala and garlic. Making sure to stir well.
  2. Make a sort of well in the middle of the mixture and gradually pour water and mix to form a thick smooth batter. Add some lemon juice and salt to taste. Then allow it to set for for about 10minutes.
  3. Heat some oil over a medium to high heat in a large saucepan (you're basically looking at 190'C). You basically want it hot enough so that the batter will sizzle once its dropped in, remembering to TURN THE HEAT DOWN when you eventually drop in the batter. (CAUTION: HOT OIL IS DANGEROUS TO LEAVE UNATTENDED? THINK NAPALM!)
  4. Add the remaining ingredients (the onions and potatoe) to the batter and mix thoroughly.
  5. Set up some paper towels in a pot and place next to the heated oil. This is what the pakora's will eventually go into once fried.
  6. Then carefully lower tablespoons of the batter mixture into the oil and fry for about 5minutes or until crispy golden brown. Once done remove carefully from the oil and drain on the paper towels.
Its best to serve these as quickly as possible once made. If its not spicy enough be sure to double the spices next time as well as experimenting with the veg i.e. cauliflower, green chili's etc etc. You can add all sorts aslong as you remember to chop them up nice and small.

You can use all sorts of sauces, like chutney and yoghurt mixtures (with a drizzle of lemon juice) but if you prefer to keep it simple, ranch dressing & ketchup work great too! These tasty little treats WILL disappear quickly, so making additional batches or even doubling the recipe maybe an evil idea :)
